Xicaru Pechuga Mole Mezcal is a remarkable expression of traditional mezcal craftsmanship. This artisanal mezcal is meticulously produced in the heart of Oaxaca, Mexico, using age-old techniques that have been passed down through generations. The name "Xicaru" itself, meaning "beautiful" in the Zapotec language, reflects the beauty of tradition and heritage that this mezcal represents.
This particular variant, the Pechuga Mole Mezcal, showcases the fusion of mezcal distillation with the rich flavors of mole, a beloved Mexican culinary tradition. It is crafted using 100% Maguey Espadin, harvested at the peak of maturity, approximately eight years old. The hallmark smoky essence of Xicaru comes from the maguey's slow cooking process in an underground conical stone oven, utilizing mesquite and ocote woods native to the Oaxacan region. The cooked maguey is then carefully crushed by a horse-drawn tahona, fermented in open-air pine vats using natural yeasts, and finally double-distilled in small copper alembics.
In homage to the ancient Zapotec culture, each bottle of Xicaru Mezcal features a unique jaguar emblem. The jaguar, symbolizing strength and agility, encapsulates the spirit of this mezcal, which is rooted in tradition, respect for nature, and the enduring craftsmanship of Oaxaca.
