El Viejito has operated as a family enterprise in Atotonilco, Jalisco since 1937, producing under NOM 1107. The distillery draws from deep-well mineral water, roasts agave in traditional brick ovens, and distills through copper pot stills — a production process largely unchanged across generations. El Viejito Reposado is certified additive-free and rested up to six months in used American bourbon barrels.

The nose opens with cooked agave, vanilla, caramel, and toasted oak. On the palate, butterscotch and warming spice develop alongside a soft baked-agave sweetness. The finish is clean and lingering, with oak and a gentle thread of sweet spice carrying through.
