Casa Loy Piedra y Agave Reposado Tequila
Piedra y Agave is the traditional-production line from Tequilera de los Altos Casa Loy (NOM 1633) in Ayotlán, Jalisco — built for drinkers who want the old methods with no diffuser shortcuts. Estate-grown Los Altos agave is harvested at full maturity and slow-cooked in stone and brick ovens, then crushed under a tahona with no water added. Fermentation runs open-air with the agave fibers left in, driven by a native yeast strain from the distillery's own surroundings, before double distillation in copper and stainless pot stills.
The Reposado rests a minimum of six months in a blend of new American white oak and ex-bourbon barrels and is bottled at a bold 98 proof (49% ABV). The barrel adds vanilla, caramel and toasted oak without burying the cooked agave that defines the line. On the nose: roasted agave, vanilla and caramel over toasted oak. The palate brings honey, toasted almond and light baking spice, closing on cinnamon, gentle earth and a pear-and-apple finish with real length. The brand bottles it without additives.
