Hella built the Orange and Aromatic bitters for bourbon; the Mexican Chocolate makes a richer after-dinner Old Fashioned and the Ginger turns a bourbon highball into something better. Five 50 ml bottles, about 35 drinks each.

Color: Buffalo Trace is a deep amber; the Hella bitters run from bright orange (Orange, Ginger) to dark mahogany (Aromatic, Mexican Chocolate).

Nose: Buffalo Trace: vanilla, mint, molasses and brown sugar. Hella bitters: orange peel, clove and cinnamon, dried chili, fresh ginger and dark cocoa.

Palate: Caramel, toffee and oak from the bourbon; a few dashes of Aromatic or Orange add the bitter spice backbone an Old Fashioned needs, while Mexican Chocolate pushes it toward cocoa and cinnamon.

Finish: Long and warming, with the bitters drying it out so the next sip tastes as good as the first.
