As a mezcal ancestral, it follows the most traditional production methods recognized by the denomination — earthen-pit roasting, natural open-air fermentation, and distillation in clay pots — and is bottled joven, unaged, so the character of the agave and the clay comes through untouched.
The pour opens with deep roasted agave and soft earthy smoke, layered with wet clay, green herbs, and ripe tropical fruit. On the palate, cooked agave sweetness runs into cacao, roasted pepper, and a distinct wet-stone minerality, all carried by the rounded, slightly rustic texture that clay-pot distillation gives.
