Xicaru Reposado Mezcal
Xicaru Reposado Mezcal is a testament to tradition and craftsmanship, deeply rooted in the rich heritage of Oaxaca, Mexico. The name "Xicaru," which means beautiful in the Zapotec language, perfectly captures the essence of this mezcal. Crafted by following Fernando Santibañez's cherished family recipe, Xicaru is a small-batch mezcal produced using time-honored techniques at a traditional palenque in Matatlán, Oaxaca. The heart of Xicaru lies in the use of 100% Maguey Espadín, harvested when it reaches approximately eight years of maturity. The distinct smokiness that defines Xicaru's character is achieved through the traditional method of cooking the Maguey in an underground conical stone oven, using mesquite and ocote woods native to Oaxaca. After cooking, the Maguey is meticulously crushed by a horse-drawn tahona, naturally fermented in open-air pine vats, and finally double-distilled in small copper alembics. Xicaru Mezcal pays homage to the ancient Zapotec culture, where the jaguar symbolized strength and agility. Each variety of Xicaru Mezcal proudly displays a unique jaguar emblem, reflecting its individual qualities and the rich heritage behind its creation.
