Founded in 2010 and nestled in the foothills of the Cascade Mountains in Woodinville, Washington, Woodinville Whiskey Co. sources its grain from Omlin Farms in Quincy, Washington — a single family farm whose wheat and rye lend a regional character rarely found in Kentucky-style bourbon. The whiskey matures in 53-gallon new charred oak barrels, and at 8 years of age it has had ample time to develop deep interaction with the wood. Private barrel selections are pulled at cask strength, meaning each bottle reflects exactly what came out of that single barrel — uncut, unfiltered, and unrepeatable.

At over 120 proof, this bourbon rewards careful sipping neat or with a few drops of water to open up the barrel-driven complexity. It also holds its own in a robust Old Fashioned or a spirit-forward Manhattan where the high proof cuts through dilution without losing character.

Tasting Notes

Nose

Rich dark caramel and brown sugar open first, followed by toasted oak and a wave of dried cherry. Underlying notes of baking spice — cinnamon and clove — build with a moment's rest in the glass.

Palate

Full-bodied and intensely layered, with barrel char, vanilla bean, and candied orange peel leading the way. The high proof brings a pronounced corn sweetness balanced by rye spice and a firm, resinous oak backbone. The 8 years of Pacific Northwest aging lend a distinctive earthy grain character that sets it apart from Southern counterparts.

Finish

Long, warming, and deeply oaky, with lingering vanilla, charred wood, and a slow fade of dark dried fruit and pepper spice. The cask-strength concentration keeps the finish going well after the last sip.
