Woodinville Whiskey Co. Straight Bourbon – Single Barrel (Private Select) is a distinctive, barrel-proof expression chosen exclusively for The Barrel Tap and personally signed by co-founder Orlin Sorensen. Crafted grain-to-glass in Washington State, the bourbon begins with a mash bill of 72% corn, 22% rye, and 6% malted barley, using grains sourced from the Omlin family farm in Quincy. Each barrel in the Private Select program is uniquely toasted and heavily charred, then aged for around five years to develop exceptional depth and character. Bottled at its natural proof without dilution, this single-barrel release showcases the bold, unfiltered personality of Woodinville’s handcrafted approach.

Nose:
Rich aromas of mature oak, creamy caramel, and warm vanilla lead the way, followed by vibrant rye spice, toasted maple, and hints of dried orchard fruit. Subtle notes of leather, cocoa, and orange zest emerge with time in the glass, revealing impressive depth.

Palate:
Full-bodied and robust, the palate unfolds in dense waves of toasted oak, brown sugar, and cinnamon baking spice. Layers of dark fruit, dried cherry, fig, and roasted nuts add complexity, while the high-rye mash bill provides a lively peppery backbone. The texture is rich and coating, showcasing the impact of the heavily charred barrel.

Finish:
Exceptionally long and warming with lingering oak spice, sweet heat, and echoes of vanilla, toffee, and baked fruit. The finish gradually softens to reveal gentle maple sweetness and a touch of cocoa.
