Siembra Valles Blanco Tequila
Siembra Valles Blanco is the flagship lowlands expression from Siembra Spirits, the import label founded by Philadelphia-based restaurateur and importer David Suro. Produced at Destilería Cascahuín (NOM 1123) in the Jalisco Valles region, it is made from 100% Blue Weber agave grown in mineral-rich volcanic soil, double-distilled in copper pot stills with open, native-yeast fermentation, and bottled unaged and unfiltered. Siembra Valles is a distinct label from the Highlands-terroir Siembra Azul, which is produced at a separate distillery — the two lines exist specifically to illustrate how growing region shapes the spirit.
The Valles terroir comes through in an earth-forward, mineral-driven profile. The nose opens with cooked agave, damp earth, and green olive brine with a lift of citrus zest. On the palate it is rounder and silkier than brighter Highlands expressions, with layers of black pepper, mineral earth, and sweet roasted agave. The finish is long and warming, leaving lingering pepper, brine, and a trace of citrus.
