Quiet Rebels Simon is the 2025 limited edition in Nc'nean's Quiet Rebels series, chosen by distiller Simon Hewitt at the organic distillery on the remote Morvern peninsula in Scotland's West Highlands.

Each Quiet Rebels release is curated by a member of the Nc'nean team. Simon, one of the distillery's longest-serving distillers and the keeper of its warehouse and casks, is a self-confessed beer fanatic, so his whisky was finished in stout casks from Scottish brewer Innis & Gunn. It began in shaved, toasted and re-charred (STR) red wine casks, filled in October 2017 and October 2020, before a finish in 100% stout casks that had originally held Nc'nean whisky themselves. Bottled in July 2025, it is buttery and chocolatey: chocolate brioche, coffee fudge cake and cherry jam with a hint of baking spice. Whisky Advocate rated it 92 points (Spring 2026), finding an Americano with a chocolate chip cookie and black cherry muffin on the nose.

Just 6,894 bottles were produced. Bottled at 48.5% ABV (97 proof), unpeated, non-chill filtered and at natural color, in a 700 mL bottle of 100% recycled glass presented in the Quiet Rebels tube. Made from 100% organic Scottish barley, certified organic and vegan friendly. Because the finishing casks held stout, the distillery notes it may contain traces of gluten.
