Manuscrito Blanco Tequila is the first chapter in a numbered series from Midwest Agave Spirits, a Wisconsin-founded venture dedicated to authentic Highland craftsmanship. Produced at El Sabino Distillery (NOM 1643) by Master Distiller Oscar Vazquez Camarena under the stewardship of fourth-generation agave grower Roberto Lopez Anaya, every bottle begins with single-estate 100% Blue Weber agave grown for six to eight years in the mineral-rich red clay soils of Los Altos, Jalisco. The agave is cooked for 48 hours in a traditional stone brick oven, extracted with deep well water, open-air fermented with native yeast, and twice distilled in copper pot stills.
Built from only three ingredients — agave, water, and yeast — this blanco reflects the elevation and terroir of the Los Altos Highlands in every pour. The nose leads with sweet cooked agave and fresh citrus, underscored by wet grass and a clean mineral lift. On the palate, ripe agave sweetness expands alongside bright citrus and herbaceous green notes, with white pepper adding warmth through the midpalate. The finish is clean and sustained, closing with lingering agave sweetness and a gentle peppery echo.
