Color: Both are crystal clear.

Nose: Espadín: soft smoke, green agave, citrus and herbs. Salmiana: wild agave — wet earth, green pepper, eucalyptus and a gentler smoke.

Palate: Two agaves from one Oaxacan palenque: the 8-year Espadín is approachable and balanced — sweet agave, light smoke, a mineral middle; the 12-year wild Salmiana is savory, vegetal and complex, with pepper and herbs over a whisper of smoke.

Finish: Medium and smoky on the Espadín; long, dry and peppery on the Salmiana.
