El Septimo XO Vintage 2007 Borderies Cognac comes from Comandon Cognac, a house established in 1821, as part of the Magnificent 7 collection. This release is drawn from a single cask, No. 52, sourced from the Borderies AOC — the smallest and rarest of the Cognac growing regions — and is vintage-dated to 2007. Bottles are individually numbered, and quantities are extremely limited.

The cognac shows an amber hue in the glass, with a nose of baked apples lifted by peach and warm ginger spice. On the palate it delivers sweet, candied stone fruit — peach and apricot — with a lush, medium-bodied texture and underlying vanilla depth. The finish is enduring, carrying woody and ginger spice notes alongside an oily texture and a lingering banana flambé character.
