Doc Holliday 8 Year Oloroso Sherry Cask Finish Kentucky Straight Bourbon is one of four cask-finished expressions the brand introduced in August 2025 to mark Doc Holliday's 174th birthday, the first time the line has released cask finishes. The bourbon spends seven years aging in Kentucky before moving to Georgia, Doc Holliday's home state, for a final year, then finishes in 500-litre ex-Oloroso sherry casks. It is bottled as a single barrel release at cask strength.

The whiskey pours a deep red-amber and opens with sweet oak, corn, and tobacco alongside leather, caramel, nutty Oloroso sherry, and a touch of black pepper. On the palate, caramelized sugar and dark chocolate lead into toasted almonds and dried fruit, with baking spice and a slightly winey character carried through from the sherry cask. The finish is fairly short, with lingering spice and dried fruit.
