Made from the elusive Agave Jabali, this mezcal is a testament to the artistry and dedication of the secret mezcalero behind it. Agave Jabali is a rugged plant that thrives on craggy rocks and cliffs, making it challenging to harvest and distill. Its name, "Jabali," which means "wild boar" in Spanish, is inspired by the agave's leaves, which resemble the teeth of a boar.
Part of the exclusive Vino de Mezcal series, this mezcal is produced using only sustainably harvested wild Jabali magueyes, ensuring the preservation of this unique agave species. The production process is a labor of love, with the agave hearts being roasted in the earth and buried for two weeks, allowing the earthy and smoky flavors to develop. The hearts are then meticulously ground using a traditional horse-drawn stone, adding to the mezcal's authenticity and depth of flavor. To capture the essence of the terroir, the agave mash is fermented with air-borne microbes, creating a one-of-a-kind mezcal. Finally, the spirit is double-distilled to perfection.
