The rum is built from a blend of aged rums that is then finished in a solera: a stacked system of American oak barrels where older rum is drawn off and topped up with younger rum, the way sherry and brandy de Jerez are made. The result is a consistent, mature blend with the depth of much older spirit.\u003c\/p\u003e\u003cp\u003eIn the glass it is a deep copper-amber. The nose brings toffee, dried fruit, vanilla and a little leather; the palate is dry rather than sweet, with cocoa, roasted nuts, orange peel and gentle oak spice, bottled at 80 proof. The finish is long and clean.\u003c\/p\u003e\u003cp\u003eSip it neat or over a single large cube, or use it where a rum should taste like rum: an Old Fashioned, a Mai Tai float or a Rum Manhattan.
